-아/어도 means 'even if' and here it runs straight into 먹다: 김치는 오래돼도 먹을 수 있어 'kimchi is still edible even when old', 이가 없어도 먹을 수 있겠어 'you could eat that without teeth'. It is the standard way to say food is fine despite something being off about it, or that you would happily eat it under bare-bones conditions.
