어 가두다

catch and lock up

가두다 is to shut something in so it can't get out, and the "-아/어" form in front says how it got there. Four of the five lines here are 잡아 가두다, "seize and lock up" — why don't they catch and imprison the wrongdoers, they lock up the gang and the courts release them, you'd get thrown in prison for stepping out of line. One line uses it for sealing something in rather than someone: twelve hours of low-temperature ageing that locks the juices in.
