-아/어서 gives the cause and 어떡하다 (short for 어떻게 하다) asks what to do about it. Usually it isn't a real question but an expression of sympathy or dismay: 네 아빠 불쌍해서 어떡해 'oh, your poor dad', 나 때문에 많이 못 먹어서 어떡해! 'I feel terrible that you couldn't eat much because of me'. Sometimes it is genuine: 밀가루가 너무 많아서 어떡하지? 'there's far too much flour, what do we do?'.
