be left over; stay in memory

남다 is what is still there once the rest is gone, and the adverb says how it remains: 외롭게 남은 호떡 하나 "one lonely leftover hotteok", 애매하게 남은 거 "the awkward bit left over". 기억에 남다 means staying in someone's memory, so 기억에 좋게 남다 is leaving a good impression. Careful with 넘게, used in two lines — that is a fixed word meaning "more than", as in 300km 넘게 남았어요, not an adverb of manner.
