세다 is counting things one by one, and the -게 adverb here is usually 이렇게, said while showing the counting: 한 살, 두 살, 세 살... 이렇게 세는 걸 '세다'라고 하는데, '하나, 둘' 이렇게 셀게요, 셀 때 이렇게 세야 되니까. It also covers counting privately what you received (좀 숨어서 얼마 받았나 이렇게 세보기도 해요). Be careful: an identically spelled 세다 means "be strong," and one line reads that way — 하여튼 세! 이상하게 세!.
