The -고 clause is what accompanies the giving. The most useful case is ordering food: 다 양파 빼고 주세요 "no onion on any of them, please" — 빼고 주세요 is how you ask for something to be left out. It also carries what was said as the thing changed hands: 물을 "여기 있습니다!" 하고 주는 "handing the water over with a 'here you are'". 넌 고민도 안 하고 줬다? is giving something away without a second thought.
