The particle 만 slots into the negative -지 않다 and singles out one thing as the only condition that matters: 너무 맵지만 않으면 정말 좋아하신다고 했어요 'as long as it isn't too spicy, he loves it', 남기지만 않으면 얼마든지 OK 'as long as you don't leave any, help yourself'. Seven of these eight lines continue with -(으)면 'if', which is where this pattern naturally lives.
