A conditional on a noun, "-(이)라면" (if it were X), plus 모르다. As 라면 몰라도 or 라면 모를까 it grants a hypothetical only to reject the real case: maybe if it were 200 layers, but not this; unless Hiddink were the ginseng hunter. Watch for the opposite shape, 라면 모를 수 없다 — "if you're X you couldn't possibly not know": no Chinese person could fail to know this novel, no science student could miss it. Whether 모르다 is negated flips the whole meaning.
